Super easy taco salad

1tablespoon chili powder
1teaspoon black pepper
1teaspoon crushed red peppers
1teaspoon cumin powder
1teaspoon garlic powder
2lbs beef (organic grass fed)
1 onion diced
1 bell pepper diced
2-4 cloves garlic minced

Brown beef and vegs together. Add a 1/4 cup water and seasonings to meat and let simmer 10 minutes.

While simmering cut up sm onion, tomatoes, olives, lettuce(I use spinach) and organic cheese (optional).

Warm up beans, I use black beans.

Place lettuce down on plate frist then put bean on and then top with meat. Add cut up onions, tomatoes, and cheese.

Corn chips are great with this. I place chips around the sides, I use baked blue corn chips. Add sour cream, avocados, salsa, or jalapeños to mix it up. Enjoy.

Chicken Tenders

1/2 cup amaranth

1/2 cup almond meal

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper

1 egg

1/4 cup milk (I use almond milk)

2 lg chicken breast (organic range raised) cut in to strips

Preheat ove to 350*. Mix amaranth flour, almond meal, black pepper, and cayenne pepper in a bowl. In a separate bowl beat milk and egg together. Place chicken strips in milk/egg mixture. One strip at a time roll in flour mixture and place in a glass pan. Bake for 15-20mins. Enjoy


Makes 6 lg or 12 sm

2 cups amaranth flour

3/4 water

3 tablespoons organic butter (room temp)

sea salt to taste

Mix all ingredients together with spatula. divide into 6 or 12 parts and roll into balls. On a flour surface pat flat. In a warmed pan place dough. Cook till bubbles appear and flip. Brown spot should appear when cooked fully. Enjoy.  Store in fridge.

Cheesy Jalapeño Biscuits

2 cups amaranth flour

1 tablespoon baking powder (non-aluminum)

1/2 cup organic butter (room temp)

2 organic eggs

1 cup milk (if using almond half milk half water)

3/4 cup organic cheese

1/2 cup chopped fresh Jalapenos

Preheat oven to 400*. Cut amaranth flour, baking powder, butter, and milk together. Cut in cheese and Jalapenos. Drop an even amount of dough on pan to make 6 to 12 biscuits. Cook for 20 min. Enjoy!
