Dessert Recipes - Hey Mr. Vitamin

Ice Cream!

1/4 cup honey

2 cups Heavy whipping cream

1 cup almond milk

1 teaspoon vanilla

+ what you pick of flavor to taste

Place everything in a ice cream maker till soft frozen then place in freezer for 1 hour. Enjoy!

Coconut Chip Cookies

1 stick organic butter (room temp)

1 cup amaranth flour

1/4 cup protein powder (optional)

1/4 cup stevia (I use sweet leaf brand)

1 teaspoon baking powder (non-aluminum)

1 cup organic unsweetened shredded coconut

1 cup dark chocolate chips (I use chopped unsweetened bakers squares)

3 eggs

1/4 cup water

1/4 cup milk

Preheat oven to 350*. Mix all ingredients in a lg bowl. Place dough on cookie sheet and bake for 20-25 mins. Enjoy!

Pumpkin Cookies

1 1/2 cup amaranth flour

1 cup almond meal

1 teaspoon baking soda

1 tablespoon baking powder (non aluminum)

1 tablespoon Cinnamon

1 teaspoon allspice

1/2 stevia( I use sweet leaf brand)

1/2 cup butter

8 oz pumpkin puree

1 egg

1 teaspoon vanilla

1 cup Dark chocolate chips( I use unsweetened)(Optional)

1 cup chopped pecans (optional)

Preheat heat oven to 350*. Combine all ingredients in a bowl. Place drops of dough on cookie sheet squish flat. Bake for 10-12 mins. Enjoy!

Lemon Bun Cake

1 cup butter

1 cup stevia

3 eggs

1 1/2 cup amaranth flour

1 teaspoon vanilla

2 tablespoon lemon zest

1/2 cup chopped pecans.

Preheat oven to 325*. Combine all ingredients in a lg bowl. In a buttered bunt cake pan pour batter. Bake for 40-45mins. Let cool 20 mins. Flip pan upside down so cake falls out. Cut and enjoy!
