Breakfast Recipes - Hey Mr. Vitamin

Blueberry Breakfast Cake

1/3 cup Almond meal (I use Natural Grocers brand)

1/3 cup Amaranth flour (I use Natural Grocers brand)

1/3 cup Vanilla protein powder( I use our TMR powder)

2 tablespoons baking powder (Non-aluminum)

1 tablespoon lemon zest

1 tablespoon apple pie spice

4 tablespoons pure organic butter (most stores have a store brand)

1 tablespoon pure vanilla extract

3 eye droppers or 2 tablespoons powdered stevia (I use Sweet leaf liquid)

5 eggs (cage free and veg fed, look for the best price)

¼ cup water

1 cup fresh organic blueberries
Extra 1 tablespoon butter
*if you don’t have organic Blueberries then soak them in one cup 2 tablespoon vinegar and room temp water for ten minutes then rinse thoroughly. This will removed toxins and chemicals.

Preheat oven to 350. Smear the extra tablespoon butter in a 9X9 glass or metal pan (Don’t use non-stick pans). In a large bowl combine almond meal, amaranth flour, protein powder, baking powder, lemon zest and apple pie spice. Mix well, making sure there are no clumps. Melt the 4 tablespoons of butter, add vanilla extract, and stevia to it then pour into dry mixture and fold together. Add eggs and water, stir till smooth. Now gently fold in blueberries. Pour in to pan and let cook 20-25 minutes or until golden brown on top. Let cool for 10 mins before cutting. Enjoy!

Option: Put peanut butter and honey on top and enjoy!


Sweet Potato Hash

Feeds 2

1 lg or 2 sm sweet potatoes cut into very small cubes (think baby cubes)

1 bell pepper cut in to very small pieces (I like the small peppers so I can get lots of colors, I use 4 to 5 small peppers)

1 med white onion cut into very small pieces

4 to 5 garlic cloves minced

2 tablespoons pure organic butter

1 tablespoon cinnamon

2 tablespoons honey (I use raw organic)

After cutting all the potatoes, peppers, onions and garlic, melt the butter in a large skillet over med heat. Place cut up vegs in warm skillet and allow to become soft and start to brown. Add cinnamon and stir gently. Add honey and stir gently but quickly. Turn off heat and remove. Enjoy!

Option: poach 2 eggs (soft) and place on top on hash. You now have a complete breakfast! Enjoy this great way to start the day!


Banana Nut Bread

Makes 1 loaf

1 cup almond meal

1 cup amaranth flour

1/2 Vanilla protein powder (optional, I use our TMR protein)

1 tablespoon baking powder (aluminum free)

1/2 tablespoon cinnamon

1/2 teaspoon allspice

1/4 cup dry/3 eyedroppers liquid stevia (I use sweet leaf brand)

1/4 cup honey ( I use raw)

2 eggs(I use cage free vegan feed)

1 stick organic butter (room temp)

1/4 cup water

1/2 cup sliced/chooped almonds, pecan or walnuts

2 bananas mashed up

Preheat oven to 350*. In a lg bowl combine: almond meal, amaranth flour, protein powder, baking power, cinnamon, and allspice mix together. I a small bowl blend together eggs, butter, water and banana. Slowly blend wet ingredients into the lag bowl of dry ingredients. the mixture will be smooth with no lump. Then fold in sliced/chopped nut of your choice. Coat loaf pan with butter and pour batter in. Bake for 35-45 mins or until toothpick comes out clean clean. Cool for 20 mins and enjoy!

Zucchini Bread

Makes 2 loaf

2 cups almond meal

1 cup amaranth flour

1 teaspoon baking soda

1 teaspoon baking powder (aluminum free)

3/4 cup protein (optional, I use our TMR protein)

3 teaspoons cinnamon

3 eggs (I use cage free vegan feed)

1 cup butter (room temp)

1/2 cup honey (I use raw)

1/4 cup dry/3 eyedroppers liquid stevia (I use sweet leaf brand)

2 cups shredded Zucchini

1 cup chopped walnuts, almond, or pecans

Preheat oven to 325*. In a lg bowl combine: almond meal, amaranth flour, protein powder, baking power, baking soda, and cinnamon mix together. I a small bowl blend together eggs, butter, and zucchini. Slowly blend wet ingredients into the lg bowl of dry ingredients. The mixture will be smooth with no lump. Then fold in chopped nut of your choice. Coat loaf pan with butter and pour batter in. Bake for 40-60 mins or until toothpick comes out clean. Cool for 20 mins and enjoy!

Pumpkin Bread

Makes 1 loaf

1 3/4 cup amaranth flour

1/2 cup dry/2 eyedroppers liquid stevia (I use sweet leaf brand)

1/2 teaspoon sea salt

1 teaspoon baking soda

1 teaspoon baking powder (aluminum free)

1 teaspoon cinnamon

1/2 teaspoon allspice

2 eggs

8 oz of pumpkin puree

1/4 cup organic butter (room temp)

1/2 cup water

1/2 cup chopped almonds, walnuts, or pecans (optional)

Preheat oven to 400*. In a lg bowl combine: amaranth flour, baking soda, baking power, sea salt, cinnamon, and allspice mix together. I a small bowl blend together eggs, butter, water and pumpkin. Slowly blend wet ingredients into the lag bowl of dry ingredients. the mixture will be smooth with no lump. Then fold in sliced/chopped nut of your choice. Coat loaf pan with butter and pour batter in. Bake for 40-45 mins or until toothpick clean. Cool for 20 mins and enjoy!

Cranberry Nut bread

Makes 1 loaf

1 cup amaranth flour

1 cup almond meal

1/2 cup protein powder (I use our TMR brand)

1 1/2 tablespoon baking powder (aluminum free)

1/2 baking soda

1/4 cup organic butter (room temp)

2 eggs (I use cage free vegan feed)

3 tablespoons orange zest

1/2 cup water

1 cup dried unsweetened cranberries

3/4 cup chopped walnuts, almonds, or pecans

Preheat oven to 350*. In a lg bowl mix together amaranth flour, almond meal, stevia, protein powder, baking powder, and baking soda. In a sm bowl blend butter, orange zest, eggs, and water. Slowly blend the wet mixture into the dry mixture till smooth. Then Fold in cranberries and chopped nuts. Coat loaf pan with butter and pour in batter. Bake for 55-60 mins. Let cool for 20 mins and enjoy!

Almond Bread

Makes 1 loaf

2 cups amaranth flour

2 cups almond meal

1/4 cup dry/ 1 eyedropper liquid stevia ( I use sweet leaf brand)

1 tablespoon baking powder (aluminum free)

1 teaspoon baking soda

2 eggs

1 cup water

1/2cup butter (room temp)

2 teaspoons apple cider vinegar

1/2 sliced almonds (optional)

Preheat oven to 400*. Blend all ingredients in Lg bowl till smooth. Coat loaf pan with butter then pour in batter. Sprinkle sliced almonds on top of loaf. Bake for 40 mins or till golden. Cool for 20 mins and Enjoy!

Biscuits and gravy

2 cups amaranth flour

1 tablespoon baking powder (aluminum free)

1/2 butter (room temp)

1 cup milk (if using almond milk half milk/half water)

Preheat oven to 400*. Place all ingredients in a bowl and blend. Take a tablespoon and drop batter on no greased pan (don’t shape, they are suppose to look messy). Cook for 20 mins or till golden. Makes 6 lg or 12 sm biscuits.

gravy

4 tablespoons butter

4 tablespoons amaranth flour

1 teaspoons pepper

1 1/2 of any milk (again if using almond milk half milk half water)

Melt butter over med heat in a saucepan then add flour. Stir over heat till brown. Slowly whisk in milk. Whisk constantly till thick then whisk in pepper. Enjoy!

optional: add no nitrates turkey uncured sausage or chopped no nitrates uncured bacon. I use “Applegate” brand. Very yummy!

BB Scones

Makes 6 lg or 12 sm scones

2 cups amaranth flour

2 cup almond meal

1/3 cup dry/ 1 1/2 eyedroppers liquid stevia (I use sweet leaf brand)

1 1/2 teaspoons baking powder (aluminum free)

1/4 cup butter (room temp)

2 eggs (I use cage free vegan feed)

3/4 cup any kind of milk (if almond milk the use half water half milk)

1 1/2 cup fresh blueberries (wash well)

Preheat oven to 375*. In lg bowl combine amaranth flour, almond meal, stevia, and baking powder. then cut in butter. I a sm bowl whisk milk and eggs. Slowly add liquid mixture to dry mixture. Don’t stir too much just till no liquids is present. Turn out batter on a floured surface. Gently knead in blueberries. Divide dough in half and shape both into an 8 inch circle. Then cut each circle into 6 wedges. Place onto a buttered baking sheet and bake for 15 to 20 mins or till golden. Let cool 10 mins and enjoy

Breakfast Cookies

super easy and yummy

makes 12 large or 24 small cookies

1/2 cup protein powder (I use our TMR protein)

1/4 cup organic butter (room temp)

2 eggs

1/4 cup chopped dates

1/4 cup raisins

1/2 cup amaranth flour

1/2 cup gluten free oatmeal

1/2 cup almond meal

1/2 cup dry/ 2 eyedroppers liquid stevia (I use sweet leaf brand)

1/4 cup honey

1/2 cup flaxseed

1/4 cup chia seeds (optional)

1/2 teaspoon baking soda

1 teaspoon baking powder (aluminum free)

1 teaspoon allspice

1 tablespoon cinnamon

1/2 cup chopped pecans

4 oz chopped or chips dark chocolate (optional) (I use unsweetened bakers squares)

Preheat oven to 350*. So easy that you just throw it all in a bowl mix it up. Then take a table spoon and place batter on cookie sheet. Bake for 12 to 14 mins. Let cool for 5-10 mins and enjoy!

Protein Balls!

1/3 cup protein powder (I use our TMR protein)

1/2 cup almond meal

1/2 cup oatmeal

1/2 cup of nut butter (I really love peanut butter with this!)

1/3 cup milk (use almond milk)

2 oz of chopped/chips of dark chocolate (optional) (I use unsweetened baker squares)

Mix all ingredients in a bowl. Then take divide mixture in to 8 servings and roll into balls. Enjoy!
