Zucchini Bread

Makes 2 loaf
2 cups almond meal
1 cup amaranth flour
1 teaspoon baking soda
1 teaspoon baking powder (aluminum free)
3/4 cup protein 
3 teaspoons cinnamon
3 eggs (I use cage free vegan feed)
1 cup butter (room temp)
1/2 cup honey (I use raw)
1/4 cup dry/3 eyedroppers liquid stevia (I use sweet leaf brand)
2 cups shredded Zucchini
1 cup chopped walnuts, almond, or pecans

Preheat oven to 325*. In a lg bowl combine: almond meal, amaranth flour, protein powder, baking power, baking soda, and cinnamon mix together. I a small bowl blend together eggs, butter, and zucchini. Slowly blend wet ingredients into the lg bowl of dry ingredients. The mixture will be smooth with no lump. Then fold in chopped nut of your choice. Coat loaf pan with butter and pour batter in. Bake for 40-60 mins or until toothpick comes out clean. Cool for 20 mins and enjoy!
