1 lg or 2 sm sweet potatoes cut into very small cubes (think baby cubes)
1 bell pepper cut in to very small pieces (I like the small peppers so I can get lots of colors, I use 4 to 5 small peppers)
1 med white onion cut into very small pieces
4 to 5 garlic cloves minced
2 tablespoons pure organic butter
1 tablespoon cinnamon
2 tablespoons honey (I use raw organic)
After cutting all the potatoes, peppers, onions and garlic, melt the butter in a large skillet over med heat. Place cut up vegs in warm skillet and allow to become soft and start to brown. Add cinnamon and stir gently. Add honey and stir gently but quickly. Turn off heat and remove. Enjoy!
Option: poach 2 eggs (soft) and place on top on hash. You now have a complete breakfast! Enjoy this great way to start the day!
