Pumpkin Bread

Makes 1 loaf
1 3/4 cup amaranth flour
1/2 cup dry/2 eyedroppers liquid stevia (I use sweet leaf brand)
1/2 teaspoon sea salt
1 teaspoon baking soda
1 teaspoon baking powder (aluminum free)
1 teaspoon cinnamon
1/2 teaspoon allspice
2 eggs
8 oz of pumpkin puree
1/4 cup organic butter (room temp)
1/2 cup water
1/2 cup chopped almonds, walnuts, or pecans (optional)

Preheat oven to 400*. In a lg bowl combine: amaranth flour, baking soda, baking power, sea salt, cinnamon, and allspice mix together. I a small bowl blend together eggs, butter, water and pumpkin. Slowly blend wet ingredients into the lag bowl of dry ingredients. the mixture will be smooth with no lump. Then fold in sliced/chopped nut of your choice. Coat loaf pan with butter and pour batter in. Bake for 40-45 mins or until toothpick clean. Cool for 20 mins and enjoy!
