1/4 cup butter
2 cups organic chicken/beef broth
2 lg potato peeled and chopped (I use sweet potatoes)
2 lg leeks sliced and washed
1 onion chopped
1/2 chopped carrot
1/4 cup celery
Place broth, butter and potatoes in a soup pan. Boil till potatoes are soft. Place in blender and blend till smooth. Pour back into pan and add onions, leeks, peas, carrots and celery. Bring back to a boil, then drop heat to med. For 10 min. Serve and enjoy!
