Cranberry Nut bread

Makes 1 loaf
1 cup amaranth flour
1 cup almond meal
1/2 cup protein powder (I use our TMR brand)
1 1/2 tablespoon baking powder (aluminum free)
1/2 baking soda
1/4 cup organic butter (room temp)
2 eggs (I use cage free vegan feed)
3 tablespoons orange zest
1/2 cup water
1 cup dried unsweetened cranberries
3/4 cup chopped walnuts, almonds, or pecans

Preheat oven to 350*. In a lg bowl mix together amaranth flour, almond meal, stevia, protein powder, baking powder, and baking soda. In a sm bowl blend butter, orange zest, eggs, and water. Slowly blend the wet mixture into the dry mixture till smooth. Then Fold in cranberries and chopped nuts. Coat loaf pan with butter and pour in batter. Bake for 55-60 mins. Let cool for 20 mins and enjoy!
