Chicken Tenders

1/2 cup amaranth
1/2 cup almond meal
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 egg
1/4 cup milk (I use almond milk)
2 lg chicken breast (organic range raised) cut in to strips

Preheat oven to 350*. Mix amaranth flour, almond meal, black pepper, and cayenne pepper in a bowl. In a separate bowl beat milk and egg together. Place chicken strips in milk/egg mixture. One strip at a time roll in flour mixture and place in a glass pan. Bake for 15-20mins. Enjoy
