BB Scones

Makes 6 lg or 12 sm scones
2 cups amaranth flour
2 cup almond meal
1/3 cup dry/ 1 1/2 eyedroppers liquid stevia (I use sweet leaf brand)
1 1/2 teaspoons baking powder (aluminum free)
1/4 cup butter (room temp)
2 eggs (I use cage free vegan feed)
3/4 cup any kind of milk (if almond milk the use half water half milk)
1 1/2 cup fresh blueberries (wash well)

Preheat oven to 375*. In lg bowl combine amaranth flour, almond meal, stevia, and baking powder. then cut in butter. I a sm bowl whisk milk and eggs. Slowly add liquid mixture to dry mixture. Don’t stir too much just till no liquids is present. Turn out batter on a floured surface. Gently knead in blueberries. Divide dough in half and shape both into an 8 inch circle. Then cut each circle into 6 wedges. Place onto a buttered baking sheet and bake for 15 to 20 mins or till golden. Let cool 10 mins and enjoy!
